Classification – naturally sweet wine from sun-dried white grapes, PDO Santorini.
Grape variety – Assyrtiko 70%, Aidani 25%, other white grapes 5%.
Vineyard – vineyards near Akrotiri, Santorini.
Vinification – overripe white grapes are sun-dried for 7–15 days, then destemmed and pressed. The sweet juice ferments slowly for more than 2 months in stainless steel tanks at a controlled temperature, followed by at least 2 years of maturation in oak barrels.
Appearance – deep reddish-brown.
Aroma – long-lasting aromas of dried apricot, honey, roasted nuts and bitter chocolate, with hints of orange.
Palate – honeyed and velvety, with notes of fig, raisin, caramel and vanilla. The long finish balances concentrated sweetness with vibrant acidity.
Food pairing – dark chocolate, fruit tarts, nut-based desserts, foie gras and pungent cheeses.
Serving temperature – 8–10 °C.
