Classification – dry red wine, PGI Florina.
Grape variety – Merlot 80%, Tannat 20%.
Vineyard – selected parcels “Winery” and “Vrachos” on the Amyndeon plateau, at 620–710 m, on sandy and sandy-clay soils over limestone with excellent drainage.
Vinification – destemming without crushing, followed by cold soak with skin contact under controlled conditions and alcoholic fermentation at gradually increasing temperatures. The wine remains on the lees for 8 months with regular stirring, then ages for 36 months in new Allier and Bertrange oak and a further 24 months in bottle. Bottled without treatment or filtration.
Appearance – deep ruby with purple hints.
Aroma – intense black fruit, cassis and spice.
Palate – rich, intense and complex, with concentrated fruit, firm structure and exceptional length.
Food pairing – rich meat dishes, grilled meats with full-flavored sauces, marinated game with chestnuts or plums, and mature creamy cheeses.
Serving temperature – 16–18 °C.
