Grape variety – Syrah 60%, Xinomavro 20%, Merlot 20%.
Vineyard – vineyards in the “Children” and “Horses” sub-regions on the Amyndeon plateau, covering 19.06 ha, at 620–710 m, on sandy and sandy-clay soils over limestone with excellent drainage.
Vinification – destemming, light crushing and cold soak with skin contact under controlled conditions, followed by alcoholic fermentation at gradually increasing temperatures. The wine remains on the lees for 8 months with regular stirring, then ages for 18 months in Allier and Bertrange oak and a further 12 months in bottle before release. Bottled without treatment or filtration.
Appearance – deep ruby with purple hints.
Aroma – powerful aromas of sweet cherry and candied plum, layered with toasty vanilla oak.
Palate – full-bodied and deep, with dark fruit, peppery spice and well-defined oak. Solid tannins are balanced by fresh acidity and generous fruit depth, leading to a long finish.
Food pairing – grilled or roasted red meats, venison, meat pies and aromatic mature cheeses.
Serving temperature – 16–18 °C.
