Alpha Axia Syrah-Xinomavro, 14.5%, 0.75 L
Classification – dry red wine, PGI Florina.
Grape variety – Xinomavro 50%, Syrah 50%.
Vineyard – vineyards in the “Petres” and “Dromos” sub-regions on the Amyndeon plateau, at 620–710 m, on sandy and sandy-clay soils over limestone with excellent drainage.
Vinification – destemming, light crushing and cold soak with skin contact under controlled conditions, followed by alcoholic fermentation at gradually increasing temperatures. The wine remains on the lees for 7 months with regular stirring, then ages for 12 months in French oak and a further 12 months in bottle before release.
Appearance – deep purple-red.
Aroma – complex aromas of vanilla, pepper and clove, with ripe blackberry and dark fruit notes.
Palate – full-bodied, with rounded tannins, balanced acidity and well-integrated oak. The finish is long, with lingering dark-fruit and quince notes.
Food pairing – barbecue, burgers, game such as wild boar and mature cheeses.
Serving temperature – 16–18 °C.
