Classification – dry red wine, PGI Crete.
Grape variety – Syrah 77%, Mandilari 21%, Vidiano 2%.
Vineyard – vineyards in the Asterousia area of central Crete, with Mandilari from Karkadiotisa, at approximately 450–500 m. The soils are clay to sandy-loam with a significant stony component.
Vinification – hand-harvested in 15 kg boxes, followed by careful grape selection and gentle destemming. Classic red vinification with approximately 7 days of extraction at 25–32 °C. The wine matures for 18 months in a combination of new and second-use oak barrels, approximately 75% French and 25% American.
Appearance – deep ruby red.
Aroma – dark berries and red cherry, with spice, pepper and subtle notes of apricot and lavender.
Palate – balanced and savory, with blackberry and cherry fruit, integrated oak, excellent structure and a remarkably long finish.
Food pairing – juicy steaks, slow-smoked ribs and veal Parmigiana.
Serving temperature – 16–17 °C.
