Grape variety – Xinomavro 100%.
Vineyard – old vines from the renowned single vineyard “Paliokalias”, on soils rich in magnesium, with moderate calcium and low potassium.
Vinification – selectively harvested grapes are traditionally vinified, followed by 12 months of maturation in French oak barrels.
Appearance – bright dark ruby.
Aroma – complex and mature, with sun-dried tomato, olive, eucalyptus and licorice, joined by ripe strawberry and plum, leather, tobacco and subtle chocolate notes.
Palate – rich and structured, with lively acidity and ripe, polished tannins. Concentrated fruit and savory complexity lead to a very long, persistent finish.
Food pairing – premium cuts of beef, roast lamb, venison and other game, mushroom-rich dishes and mature hard cheeses.
Serving temperature – 16–18 °C.
