Classification – dry rosé wine, PDO Amyndeon.
Grape variety – Xinomavro 100%.
Vineyard – single vineyard “Hedgehog”, 17.93 ha, on the Amyndeon plateau at approximately 690 m, with northern exposure toward Lake Petron and Mount Voras. Sandy and sandy-clay soils provide excellent drainage.
Vinification – destemming, optical grape sorting and light crushing, followed by a 2-hour cold soak at 8 °C. Alcoholic fermentation takes place in temperature-controlled stainless steel tanks, followed by 3 months on the lees with regular stirring. Produced using the saignée method.
Appearance – pale, lively pink.
Aroma – fresh and crisp, with aromas of peach, strawberry and rose petals over a gently spicy background.
Palate – dry yet fresh, creamy and fruity, with subtle spice, a light tannic grip and a long, persistent finish.
Food pairing – Greek cuisine, roasted red peppers, stuffed tomatoes and peppers, grilled salmon, crab cakes and lightly spicy Asian dishes.
Serving temperature – 12 °C.
