Classification – semi-dry rosé wine, PGI Cyclades.
Grape variety – Aidani 50%, Assyrtiko 30%, Mandilaria 20%.
Vineyard – “Agios Nikitas” vineyard near Emporio, Santorini.
Vinification – after clarification of the must, fermentation takes place in stainless steel tanks at a controlled temperature. The wine then ages for 4 months on the fine lees.
Appearance – vibrant pink.
Aroma – expressive pomegranate aromas with distinctive notes of rose, wild strawberry and cherry.
Palate – full-bodied, with subtle sweetness balanced by refreshing acidity. A gentle spritz adds freshness and liveliness, while delicate tannins lead to a long, fruity finish.
Food pairing – salmon, seafood pasta, goat cheese, fruit salads and Asian cuisine.
Serving temperature – 10–12 °C.
