Grape variety – Moschofilero 100%.
Vineyard – privately owned “Perpatiara” vineyard in Rizes, Arcadia, at approximately 750 m, on clay-loam soils.
Vinification – selected early-harvested grapes are whole-bunch pressed and fermented at low temperature. The base wine spends a few months in oak before the second fermentation in bottle using the traditional method, followed by approximately 2 years on the lees before riddling and disgorgement.
Appearance – light lemon-gold with a fine, intense and persistent stream of bubbles.
Aroma – citrus blossom and peel, layered with biscuit, brioche and subtle autolytic notes.
Palate – rich yet refreshing, with balanced acidity, creamy complexity and a long, persistent finish.
Food pairing – aperitif, ceviche and other raw fish, shellfish, caviar, fish roe, seafood pasta and mature cheeses.
Serving temperature – 9–11 °C.
