Classification – off-dry white sparkling wine without PDO/PGI.
Grape variety – Vilana, Vidiano, Muscat of Spina.
Vineyard – vineyards in the Alagni area of central Crete, at approximately 520 m, on clay-loam soils.
Vinification – hand-harvested during the last week of August. The varieties are vinified separately and blended after tasting to achieve the desired freshness and texture. Secondary fermentation adds gentle creamy complexity and a fine bead.
Appearance – mid straw with fine, lively bubbles.
Aroma – peach and juicy stone fruit, with apple, cherry blossom and delicate white-flower notes.
Palate – gently sweet and lively, with refreshing bubbles, ripe fruit and a soft, aromatic finish.
Food pairing – fruit-paste desserts, vegetable risotto and a wide range of antipasti.
Serving temperature – 9–10 °C.
