Classification – dry white wine, PGI Florina.
Grape variety – Sauvignon Blanc 100%.
Vineyard – vineyards in the “Children” and “Alpheta” sub-regions on the Amyndeon plateau, at 620–710 m, on sandy and sandy-clay soils over limestone with excellent drainage.
Vinification – destemming, optical grape sorting and light crushing, followed by 16 hours of skin contact. Alcoholic fermentation takes place in temperature-controlled stainless steel tanks, followed by 4 months on the lees with regular stirring.
Appearance – brilliant light yellow with greenish hints.
Aroma – lively and varietal, with gooseberry, passion fruit, melon, lychee and a hint of honeysuckle.
Palate – round and balanced, with crisp freshness, finesse and a hint of lime. Richly textured, with a long, persistent finish.
Food pairing – shellfish and seafood, grilled fish, Asian cuisine and pasta dishes.
Serving temperature – 12 °C.
