Classification – dry white wine, PGI Thessaly.
Grape variety – Sauvignon Blanc 50%, Roditis Fox 50%.
Vineyard – Prosilia vineyards in the Rapsani area, on the foothills of Mount Olympus, at approximately 450–480 m.
Vinification – the two varieties are vinified separately. Roditis Fox undergoes one day of skin contact before alcoholic fermentation in stainless steel and 3 months on the lees with regular stirring. Sauvignon Blanc undergoes 4 days of skin contact before alcoholic fermentation in stainless steel and 5 months on the lees with regular stirring.
Appearance – light yellow.
Aroma – intense and fresh, with subtle grassy notes, stone fruit and mango.
Palate – ripe and broad, with balancing acidity, good volume and depth, and a fresh, persistent finish.
Food pairing – seafood, grilled fish, white meats, salads and soft cheeses; also enjoyable as an aperitif.
Serving temperature – 8–10 °C.
