Classification – dry white wine, PDO Santorini.
Grape variety – Assyrtiko 100%.
Vineyard – old, own-rooted vineyards in Pyrgos, Emporio and Megalochori, Santorini, on sandy volcanic soils rich in pumice and ash.
Vinification – grapes are cooled for 24 hours, then whole-bunch pressed slowly at low pressure. Fermentation takes place in stainless-steel tanks with selected yeasts at 16–17 °C, followed by approximately 3 months on the fine lees.
Appearance – bright straw-yellow.
Aroma – citrus fruit with distinctive mineral and flinty notes and a characteristic hint of iodine.
Palate – vibrant, rich and well-structured, with pronounced freshness and a long, persistent finish.
Food pairing – carpaccio, shrimp pasta and a wide range of seafood.
Serving temperature – 9–11 °C.
