Classification – dry white wine, PDO Santorini.
Grape variety – Assyrtiko 100%.
Vineyard – very low-yielding, old Assyrtiko vines on terraced southeastern slopes of Pyrgos, Santorini, traditionally trained in the kouloura system.
Vinification – grapes are harvested at maximum natural ripeness and whole-bunch pressed in a vertical press. Fermentation takes place in large French oak barrels at 15–16 °C, followed by 8 months on the fine lees and at least 6 months of bottle maturation.
Appearance – bright straw-yellow.
Aroma – layered ripe and caramelized citrus and stone fruit, with honeycomb, roasted nuts and vanilla.
Palate – full-bodied, concentrated and ripe, with vibrant acidity, mineral tension and a long, persistent finish.
Food pairing – hard cheeses, large oily fish, white meats with creamy sauces, fish roe and sea urchin.
Serving temperature – 10–12 °C.
