Classification – dry white wine, PGI Crete.
Grape variety – Vidiano 100%.
Vineyard – organic vineyards in central Crete, at approximately 550 m, on clay-loam soils with northern exposure.
Vinification – hand-harvested during the last week of August. After destemming, the grapes undergo 24 hours of skin contact at 10 °C. The free-run juice ferments in stainless steel at 15–17 °C for 16 days, followed by spontaneous malolactic fermentation.
Appearance – pale yellow.
Aroma – sweet stone fruit and blooming herbs, with hints of citrus.
Palate – velvety and full-textured, with creamy fruit, freshness and mineral notes on the finish.
Food pairing – seafood, meats in creamy sauces and Mediterranean vegetable dishes such as stuffed zucchini blossoms.
Serving temperature – 10–12 °C.
