Classification – dry white wine, PGI Crete.

Grape variety – Assyrtiko 100%.

Vineyard – single-area “Voila” vineyard in Sitia, eastern Crete, at approximately 580 m, on loam soils with northern exposure.

Vinification – hand-harvested at optimum fruit maturity. The grapes undergo approximately 24 hours of skin contact at 10 °C, while a small proportion ferments on the skins. Fermentation takes place in stainless steel at 17–18 °C.

Appearance – bright platinum.

Aroma – citrus and white-fleshed fruit, with fresh herbal and chalky notes.

Palate – rich and crisp, with saline freshness and a distinctive mineral finish.

Food pairing – pork with celery, fish and shellfish.

Serving temperature – 10–12 °C.
