Vineyard – single-area “Psarades” vineyard in Alagni, central Crete, at approximately 480 m, on clay-loam soils.
Vinification – approximately 8 hours of skin contact. A small proportion of early-harvest juice is included to balance acidity and enhance the herbal character. Fermentation takes place in stainless steel at 17–19 °C, followed by approximately 4 months on the lees.
Appearance – bright yellow.
Aroma – distinctive herbal aromas of bay leaf and rosemary, with citrus blossom and fresh citrus fruit.
Palate – balanced and savory, with vibrant acidity and an intense aromatic finish.
Food pairing – fried small fish, cuttlefish with spinach, white meats, pulses and savory pies with greens and aromatic herbs.
Serving temperature – 10 °C.
